  • 1 scotch bonnet pepper (optional, for a bit of heat)
  • Salt and pepper to taste
  • 2 tablespoons of oil
  • 1 clove of garlic, minced
  • 1 teaspoon of ginger, minced

Instructions:

  1. Prep the Eggs: Prepare the eggs by cracking them into a bowl, adding a touch of salt, and whisking until smooth. Set aside.
  2. Cook the Vegetables: To cook the vegetables, heat the oil in a pan over medium heat. Combine the chopped onions, garlic, and ginger. Cook the onions until they’re tender and brown.
